Ready, steady…SOUP!

As Ludwig van Beethoven famously said, “Only the pure in heart can make a good soup.” And we know that you, our lovely readers, are as pure as they come! No sweetie wrappers and biscuit tins stashed away in your tack rooms, oh no, purer than Snow White herself you lot. Hmmmm. 

Anyway, winter is a-coming and we’ve curated a wonderful series of recipes to help you prepare scrumptious, healthy and quick meals so that after a long day, you can sit back, watch Love Island re-runs and singalong to Chris & Kem’s new single. OK – stop now – we are way off track…

We’re kicking off with some fantastically simple soup recipes that take minutes to make and can be batched up for future meals. First up is eventing mum & freelance cook Carola Williams’s delicious recipe for Beetroot Soup, full of vitamins and minerals and packed with powerful antioxidants. 

INGREDIENTS:

2 medium sized onions

750g cooked beetroot

2 stock cubes ( chicken or vegetable)

2 pints of water

salt & pepper to taste

50g butter

BUY INGREDIENTS

METHOD:

1.     Slice onions

2.     Melt butter in pan at medium heat

3.     Add sliced onions

4.     Sweat for about 5-7 minutes (Stir to ensure not to burn)

5.     Slice beetroot and add to the onions

6.     Cook for 5 minutes (keep stirring)

7.     Add half the water, stock cubes and salt and pepper

8.     Cook on low heat and cover.  When beetroot and onion is cooked let sit for a little while to cool then liquidize.

9.     Re-heat, add salt and pepper if needed.

10.  Serve with warm French bread
